The perfect summertime refreshment! I only want to drink this from now on.
Yes, I know its a lot of sugar, but don’t worry - you will be diluting it to drink!
You will need:
- 500g bag non-refined sugar
- 2 lemons
- 2 handfuls elderflowers
- 300ml water
First, zest the 2 lemons, preferably with one of these little tools, but if you don’t have one - the smallest side of a grater will work.
Rub the stems of the flowers until all of the flowers have fallen into a big mixing bowl. Slice the lemons and place them in the bowl with the flowers.
Pour the whole bag of sugar in a heavy saucepan and add 300ml cold water, then heat on low. Keep stirring and bring to a simmer - the sugar should all dissolve, then after 10 or so minutes the syrup should become semi-transparent - so that you can see the wooden spoon at the bottom of the pan.
Stir in the lemon zest, then continue to boil for 5 minutes. Pour over the lemons and flowers, cover with clingfilm, and leave to one side for 24 hours, for the flavours to infuse. When you come back, pour the whole mixture through a sieve into another bowl, pressing all the juices out.
Pour into a big jam jar or other container, and refrigerate. It should keep for a couple of weeks. Just dilute a little of the cordial with water or soda water, and drink with ice and lemon. Don’t worry about the little bits in there - its only pollen, just adds to the flavour!
